Une salade de canard fumé au Pont Lévêque décrite par nos amis d’Outre-Manche comme :
‘A beautiful spring salad with the flavours of France at its best’
Salade de canard fumé au Pont Lévêque – 6 personnes
3 poitrines de canard fumé
200g de raisins verts frais
1 Pont Lévêque
300g de feuilles d’épinard
200g de roquette
3 oignons nouveaux
Huile d’olive
Vinaigre balsamique
Sel et poivre
20g de pignons de pin
30g de raisins secs
Laver la roquette et les feuilles d’épinard.
Peler les raisins frais (pour les plus courageux) et les couper en deux.
Couper les oignons nouveaux en deux dans le sens de la longueur puis les émincer.
Couper le Pont Lévêque en fines tranches.
Faire revenir les pignons de pins dans un filet d’huile d’olive jusqu’à ce qu’ils dorent.
Dans bol, mélanger la roquette, les feuilles d’épinard avec une cuillère à soupe d’huile d’olive et de vinaigre puis ajouter les raisins secs, les oignons nouveaux et les pignons de pin.
Au milieu d’une assiette, dresser le mélange de salade puis ajouter en couche le fromage et les tranches de poitrine de canard.
Décorer avec les raisins frais.

My French is not what it used to be. Any chance of posting this in English? It looks so good and I would love to make it. Either that or I’m going to have to do some brushing up on my French, which wouldn’t be a bad thing!

Smoked duck breast with Pont Leveque, mixed leaves and white grapes – 6 people
3 smoked duck breast
200g of white grapes
1 Pont leveque
300g Baby spinache
2 bundles of rocket salad
3 Spring onions
20g of pine nuts
30g of dried raisins
Balsamic vinegar
Olive oil
Salt and pepper
Wash the salads in a cold water bath, do not let the water run over the leaves, they will break and turn brown.
Peel the white grapes, and cut them in half.
Cut the spring onion lenghtwise in half and then on a slight angle cut them in small slices.
Slice the pont leveque in fine slices.
Mix the olive oil and the vinegar with a pinch of salt and pepper, add the zest from a lemon.
Pan fry in a little bit of olive oil the pine nuts with a pinch of salt.
Mix in a bowl the salads with the vinaigrette, then add the dried raisins. and the finely sliced spring onions.
Place the salad in the middle of a plate and place around it the sliced duck breats and top it up with the cheese and the white grapes.
Wow – now there’s a combination of ingredients made in heaven!
